Ingredientes

  • 3 Tbsp. red wine vinegar
  • 1/3 c. extra-virgin extra virgin olive oil
  • 2 x garlic cloves minced
  • 1/4 tsp crushed red pepper flakes - (to 1/2)
  • 1 Tbsp. minced fresh thyme leaves
  • 1 Tbsp. minced parsley leaves
  • 4 x beef tournedos, 1" thick - (6 ounce ea)
  • 4 x strip steaks - (12 ounce ea)
  • 4 piece boneless skinless chicken breast - (6 to 8 ounce ea)
  • 4 x center-cut 1"-thk pork loin chops - (8 ounce ea)
  • 2 Tbsp. butter
  • 2 Tbsp. minced shallot or possibly onion
  • 4 x crimini or possibly button mushrooms finely minced
  • 2 Tbsp. all-purpose flour
  • 1 c. beef, chicken or possibly vegetable stock

Direcciones

  1. Combine marinade ingredients in the bottom of a shallow dish. Season meat of choice with salt and pepper and set meat into marinade and turn to coat. Allow meat to hangout 10 min.
  2. Heat a nonstick skillet over medium-high heat. Add in marinated meat to the pan and cook 5 or possibly 6 min on each side. Remove meat from the pan to a hot platter.
  3. Add in butter to the skillet, minced shallot or possibly onion and mushroom bits (optional) then saute/fry for 3 min over moderate heat. Add in flour to the pan and cook for 2 min, stirring constantly. Whisk in stock and reduce for another minute. Pour pan gravy over the meat and serve.
  4. This recipe yields 4 servings.
