Marinated Rump Steak

Ingredientes

  • 4 piece middle cut rump steak
  • 20 gm garlic
  • 10 gm thyme
  • 1 x onion, very finely minced
  • 100 ml balsamic vinegar
  • 150 ml extra virgin olive oil
  • 50 ml oyster sauce
  • 1 x lemon, juice of
  • 200 gm pureed sundried tomatoes
  • 4 x Southern Gold potatoes
  • 4 slc good quality bacon, rind removed
  • 1 c. breadcrumb mix made from combining Japanese breadcrumbs and brioche and macadamias
  • 4 bn baby bok choy

Direcciones

  1. Blend all marinade ingredients and pour over steak. Leave to marinate for 2 hrs.
  2. Cut potatoes in half and roast in a 200deg.C. oven till tender. Heat a little oil in a pan and when very warm, seal steak then place breadcrumbs mix on top and place steak in the oven till golden brown. Remove and rest in hot place. Cook bacon in pan and keep hot.
  3. Toss bok choy in pan on medium heat till wilted.
  4. To assemble, place potatoes on serving plates. Top with bacon, bok choy and beef.
