Ingredientes

  • 8 lrg scallops without corals
  • 8 x scallop corals
  • 4 Tbsp. dry white wine
  • 1 ounce pickted ginger shredded
  • 4 ounce sugar snap peas blanched
  • 1 sm galia melon cubed
  • 1 x mango peeled and diced
  • 1 x chilli finely diced
  • 3 Tbsp. sesame oil
  • 1 Tbsp. liquid honey
  • 1 Tbsp. soy sauce
  • 1 Tbsp. minced coriander leaves

Direcciones

  1. Poach the corals in the wine for two min cold and dice.
  2. Thinly slice the scallops horizontally.
  3. Combine the scallops corals ginger peas melon mango and chilli.
  4. Toss this mix in a dressing made from the remaining ingredients and the natural juices from the fruits.
  5. Season to taste.
  6. Raw scallops are sweet tender and delicious.
  7. In fact by the time you eat them they will have been "cooked" by the marinade.
  8. Serves 4
