Receta Marinated Shrimp
I recently shared this delicious recipe on The Best Blog Recipes, where once a month I will be Guest Posting~ This recipe is easy and delicious! It is perfect for the upcoming Labor Day week-end~ Now that the Football Season is here, it's time to dig out those appetizer recipes:) Keep this recipe handy, it's always a big hit at any tail-gating party!!
Marinated Shrimp
- 2 lbs cooked medium shrimp, peeled and deveined
- 1 medium red onion, cut into rings
- 2 medium lemons, cut into slices
- 1 cup pitted black olives, drained
- 1 16 oz jar pepperoncini, drained
- 8 oz mozzarella, provolone, or pepper jack cheese, cubed
- 1/2 cup olive oil
- 1/3 cup minced fresh parsley
- 3 T lemon juice
- 3 T red wine vinegar
- 1 garlic clove, minced
- 1 bay leaf
- 2 dried chili peppers
- 1 T minced fresh basil or 1 t dried basil
- 1 t salt
- 1 t ground mustard
- 1/2 t cayenne pepper
- 1 T whole black peppercorns
In a 3 qt. glass serving bowl, combine the shrimp, onion, lemons, olives, pepperoncini, and cheese. In a jar with a tight fitting lid, combine the remaining ingredients; shake well. Pour over shrimp mixture and stir gently to coat.
Cover and refrigerate for 24 hours, stirring occasionally. Discard bay leaf and chili peppers before serving.
