Ingredientes

  • 1/4 c. Plus 2 Tbsp. water
  • 1 1/4 c. Light corn syrup
  • 3/4 c. Plus 1 Tbsp. sugar
  • 4 lrg Egg whites
  • 1 pch salt
  • 1 pch cream of tartar
  • 2 tsp Vanilla extract

Direcciones

  1. In a small saucepan, fitted with a candy thermometer, bring the water, corn syrup and 3/4 c. sugar to 246 degrees (hard ball stage).
  2. In the meantime, in the completely clean and dry bowl of an electric mixer, whisk the egg whites, salt, and cream of tartar till creamy and foamy.
  3. Still whisking, sprinkle in the Tbsp. of sugar and continue to whisk till the whites hold very soft peaks. With the mixer on slow, carefully drizzle in the warm syrup. Turn the mixer to high and whisk till thick, fluffy and just hot, about 7 min. Turn the mixer to high and whisk till thick, fluffy and just hot, about 7 min.
