%3C/p%3E%3Cp%3EAnyhoo,%20I'm%20here%20sharing%20a%20basic%20yet%20delicious%20Chinese%20recipe%20with%20you,%20for%20Martha%20Mondays!%20A%20special%20thanks%20to%20Brette%20for%20hosting%20:O)%20%20PJ%20and%20I%20both%20had%20kinda%20ruled%20this%20recipe%20out,%20thinking%20it%20would%20be%20nothing%20special%20at%20all.%20But%20boy%20were%20we%20wrong.%3C/p%3E%3Cp%3ELike%20last%20time%20I%20tried%20to%20look%20for%20scallions,%20we%20couldn't%20find%20them%20at%20our%20local%20grocer.%20Still%20no%20luck%20this%20time%20around%20either.%20But%20we%20did%20find%20green%20onions,%20which%20are%20pretty%20much%20the%20same%20thing.%3C/p%3E%3Cp%3EWe%20decided%20to%20cook%20the%20frozen%20snow%20peas%20first%20(since%20they%20weren't%20fresh)%20and%20cooked%20them%20in%20the%20microwave%20according%20to%20the%20directions%20on%20the%20package.%3C/p%3E%3Cp%3ECook%20rice%20according%20to%20package%20instructions.%20Set%20aside.%20Pound%20breasts%20with%20a%20mallet%20until%201/4%20inch%20thick.%20Cut%20into%20strips,%20each%203%20inches%20long%20and%201/2%20inch%20wide).%20Season%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3EHeat%201%20tbsp%20oil%20in%20a%20medium%20nonstick%20skillet%20over%20medium%20heat%20until%20hot%20but%20not%20smoking.%20Cook%20chicken%20until%20just%20cooked%20through.%20Transfer%20to%20a%20plate.%3C/p%3E%3Cp%3EReduce%20heat%20to%20low%20and%20add%20remaining%20tablespoon%20oil.%20Add%20the%20eggs;%20Just%20as%20whites%20begin%20to%20set,%20stir%20to%20scramble.%20Add%20scallions%20and%20ginger;%20cook%201%20minute.%20Add%20reserved%20rice%20and%20bell%20pepper;%20cook%202%20minutes.%20In%20a%20separate%20bowl,%20stir%20together%20the%20soy%20sauce,%20sugar,%20and%20stock;%20add%20it%20to%20the%20skillet.%20Add%20the%20cooked%20snow%20peas%20and%20reserved,%20cooked%20chicken;%20cook%20until%20heated%20through.%3C/p%3E%3Cp%3EThis%20Chicken%20Fried%20Rice%20packed%20so%20much%20flavor,%20and%20just%20because%20I%20love%20the%20saltiness%20of%20soy%20sauce,%20I%20added%20a%20couple%20of%20squirts%20of%20soy%20sauce%20to%20my%20rice%20and%20chicken%20at%20the%20end.%20It%20really%20was%20surprisingly%20flavorful%20and%20delicious!%20I%20was%20very%20glad%20that%20I%20chose%20this%20recipe,%20in%20fact.%3C/p%3E%3Cp%3EI'm%20not%20sure%20if%20homemade%20Chinese%20food%20tastes%20better%20than%20the%20original....%20that%20would%20probably%20be%20a%20sin!!%20But%20man%20is%20it%20so%20delicious%20and%20less%20expensive%20and%20not%20very%20difficult%20to%20make.%20So%20please%20make%20this%20traditional%20Chicken%20Fried%20Rice%20recipe%20soon,%20and%20very%20soon.%3C/p%3E%3Cp%3EPeace,%20and%20bacon%20grease!%3C/p%3E){kind=link}
