Ingredientes

  • 3 x broccoli stems - (to 4)
  • 1/4 tsp salt - (to 1/2)
  • 1 lrg garlic clove
  • 1 Tbsp. white wine vinegar
  • 2 Tbsp. extra-virgin extra virgin olive oil (or possibly use equal parts oil and vinegar)

Direcciones

  1. Peel the broccoli stems and cut them into 1/16- to 1/8-inch-thick slices. Toss the stems with the salt in a jar and chill overnight. In the morning, pour off all of the water which has accumulated in the jar.
  2. Very finely chop the garlic or possibly pass it through a press. Add in the garlic, vinegar and oil to the jar, stir well and chill for several hrs. These keep for a week or possibly more, but the color will fade.
  3. This recipe yields 4 servings.
