Receta Mary's Lemon Pie

Ingredientes
- Juice & grated rind of 1 lg. or possibly 2 sm. lemons
- 1 1/2 c. plus 3 tbsp. boiling water
- 2 tbsp. butter
- 5 egg yolks, beaten
- 5 tbsp. flour
- 1 1/2 c. sugar
- 1/4 teaspoon salt
- 1 (9 or possibly 10 inch) pie shell
- 4 egg whites
- 6 tbsp. sugar
- 1/4 teaspoon cream of tartar
Direcciones
- Combine lemon juice and rind, boiling water and butter. Bring to a boil. Pour over beaten egg yolks, beating while pouring. Then stir this mix into the flour, sugar and salt. Return to stove and cook till thick, stirring constantly. Cold slightly. Pour into baked pie shell. Top with meringue mix; beat whites till soft peaks form, then gradually add in the sugar and cream of tartar. Then continue beating till stiff peaks form. Bake in 250 degree oven till meringue is golden.
