When I get a minute, one of my favorite things to do is visit Mary at Deep South Dish! She always has the best recipes and they make my mouth water. I told her recently that my ideal weekend would be to visit her down in Cajun Country and cook with her, learn the tricks of the trade and eat some good down home cookin’. Now on to this fabulous recipe…
Mary’s Macaroni & Olive Salad
INGREDIENTS:
- 2 cups dry macaroni-any variety
- Extra virgin olive oil
- 3/4 cup mayonnaise-I used Light variety
- 3/4 cup sour cream-I used low fat variety
- 1/3 cup milk-Iused skim
- 3 tablespoons pickle relish
- 1/2 teaspoon dry mustard
- 1/4 cup Cajun seasoning (Mary and I both used Slap Ya Mama)
- Juice of 1 lemon (optional, but I liked it)
- Salt and pepper, to taste
- 1/2 cup Vidalia onion, chopped
- 1/4 cup celery, chopped
- 1/2 cup carrots, sliced
- 3/4 cup radishes, sliced
- 1 (2 ounce) jar pimentos, drained
- 1 can pitted black olives, drained and halved or sliced
- 1/2 cup sliced or halved pitted green olives
DIRECTIONS:
Bring a large pot of water to a boil and generously salt. Add the macaroni and cook according to package directions; drain, rinse and drizzle lightly with olive oil. Transfer to a large bowl. In a small bowl mix together mayonnaise, sour cream, milk, pickle relish, dry mustard, Cajun seasoning, basil, lemon juice, salt and pepper; set aside. Add the onion, celery, carrots, radishes and pimentos to the pasta and mix together. Stir in the mayonnaise mixture, stir well, but take care not to break up the pasta. Add olives and toss gently. Cover and refrigerate overnight before serving, stirring occasionally.
