%20%20Of%20the%20final%20five,%20I%20was%20really%20inspired%20by%20Emma%20whose%20love%20of%20middle%20eastern%20spices%20and%20modern%20use%20of%20ingredients%20mirrors%20the%20zeitgeist%20made%20mainstream%20by%20Ottolenghi.%3C/p%3E%3Cp%3EYou%20may%20recall%20that%20Adagio%20Tea%20sent%20me%20a%20sample%20pack%20of%20their%20gorgeous%20teas%20to%20try.%20I%20wrote%20about%20their%20artisan%20teas%20in%20last%20month%E2%80%99s%20IMK%20post.%20They%20have%20a%20huge%20range%20and%20their%20green%20teas%20alone%20are%20worth%20a%20look%20at.%20Their%20Masala%20Chai%20is%20quite%20incredible%20%E2%80%93%20it%20has%20the%20deep%20flavour%20that%20I%20remember%20from%20my%20childhood%20and%20is%20chock%20full%20of%20whole%20spices%20like%20cloves,%20cinnamon%20bark,%20cardamom%20seeds%20and%20ginger%20as%20well%20as%20black%20Ceylon%20tea.%3C/p%3E%3Cp%3ESpurred%20on%20by%20Emma%E2%80%99s%20creations%20on%20Master%20Chef,%20a%20LOT%20of%20dangerously%20dark%20bananas%20and%20Adagio%E2%80%99s%20Masala%20Chai,%20I%20adapted%20my%20go-to%20recipe%20for%20Banana%20Bread%20from%20How%20to%20be%20a%20Domestic%20Goddess%20by%20Nigella%20Lawson.%20It%E2%80%99s%20a%20recipe%20I%20have%20been%20making%20for%20years%20and%20it%20never%20lets%20me%20down.%20It%E2%80%99s%20particularly%20devilish%20and%20delicious%20when%20made%20with%20chocolate%20chips%20instead%20of%20fruit,%20but%20that%20is%20another%20story!%3C/p%3E%3Cp%3EBecause%20I%20had%20so%20many%20bananas%20I%20used%20them%20all%20and%20in%20retrospect,%20it%20was%20too%20much%20and%20caused%20the%20loaves%20to%20become%20heavy%20and%20sink%20in%20the%20middle%20when%20cooling.%20In%20the%20recipe%20below,%20I%20have%20written%20the%20amounts%20as%20they%20should%20be%20and%20not%20as%20I%20did%20this%20time.%3C/p%3E%3Cp%3EI%20mash%20the%20bananas%20coarsely%20as%20this%20enables%20the%20loaves%20to%20remain%20lovely%20and%20moist%20and%20prefer%20to%20use%20light%20brown%20sugar%20for%20a%20deeper%20more%20caramel%20flavour.%20%20Steeping%20the%20fruit%20in%20very%20a%20very%20strong%20solution%20of%20masala%20chai%20gives%20them%20a%20haunting%20flavour%20when%20you%20bite%20into%20a%20plumped%20up%20morsel.%20I%20have%20enhanced%20that%20with%20a%20little%20cardamom%20stirred%20through%20the%20batter%20too.%3C/p%3E%3Cp%3EThe%20icing.%20Oh%20my%20God,%20the%20icing!%20It%E2%80%99s%20just%20sublime.%20I%20wanted%20to%20compliment%20the%20heady%20banana%20and%20masala%20chai%20flavours%20of%20the%20loaf%20and%20put%20this%20icing%20together.%20The%20flavour%20reminds%20me%20of%20coconut%20burfi%20or%20penda%20(which%20my%20father%20adored)%20%E2%80%93%20Indian%20sweets%20as%20Jake%20refers%20to%20them%E2%80%A6%3C/p%3E%3Cp%3EMaggi%20Coconut%20Milk%20Powder%3C/p%3E%3Cp%3EDried%20Rose%20Petals%3C/p%3E%3Cp%3EI%20really%20like%20using%20coconut%20powder%20as%20you%20can%20get%20the%20depth%20of%20flavour%20you%20want%20and%20also%20the%20thickness%20by%20adjusting%20the%20liquid%20to%20powder%20ratio.%20A%20further%20rummage%20in%20the%20pantry%20led%20me%20to%20the%20gorgeously%20fragrant%20rose%20petals%20I%20bought%20recently%20on%20a%20foray%20into%20Shepherd%E2%80%99s%20Bush%20with%20Elaine%20and%20a%20bag%20of%20pistachio%20nuts.%3C/p%3E%3Cp%3EI%20ended%20up%20with%20a%20Magic%20Carpet%20Banana%20Bread!%20I%20think%20Emma%20would%20approve!%3C/p%3E%3Cp%3EMasala%20Chai%20Banana%20Bread%20with%20Coconut%20Cream%20Cheese%20and%20Cardamom%20Icing%3C/p%3E%3Cp%3EINSTRUCTIONS%3C/p%3E%3Cp%3ESteep%20the%20dried%20fruit%20with%20the%20hot%20masala%20chai%20for%20an%20hour%20(or%20microwave%20on%20high%20for%202%20minutes%20and%20steep%20for%20as%20long%20as%20you%20can)%3C/p%3E%3Cp%3EPre-heat%20oven%20to%20170C%20and%20pop%20a%20paper%20case%20into%20each%20of%20two%20loaf%20tins.%20Put%20the%20butter%20in%20a%20heat%20proof%20bowl%20and%20place%20in%20the%20oven%20to%20melt.%20Check%20after%203-4%20minutes.%3C/p%3E%3Cp%3EPlace%20the%20flour,%20baking%20powder%20and%20salt%20in%20a%20small%20bowl%20and%20whisk%20to%20combine.%20Set%20aside.%3C/p%3E%3Cp%3EMash%20the%20bananas,%20coarsely,%20and%20set%20aside.%3C/p%3E%3Cp%3EWith%20an%20electric%20mixer,%20beat%20together%20the%20cooled%20melted%20butter%20and%20the%20sugar%20until%20creamy%20and%20caramel%20in%20colour.%3C/p%3E%3Cp%3EAdd%20the%20eggs,%20one%20at%20a%20time%20and%20make%20sure%20to%20beat%20well%20after%20each%20one.%3C/p%3E%3Cp%3EAdd%20the%20bananas%20and%20the%20vanilla%20extract%20and%20mix%20well%20and%20finally,%20stir%20in%20the%20drained%20dried%20fruit.%3C/p%3E%3Cp%3EScrape%20into%20the%20prepared%20loaf%20pans%20and%20bake%20for%2050%20minutes.%20Test%20with%20a%20wooden%20skewer%20which%20should%20come%20out%20moist%20but%20not%20with%20batter%20clinging%20to%20it.%20Let%20cool%20completely%20before%20icing.%3C/p%3E%3Cp%3EWhile%20the%20loaves%20are%20baking,%20make%20the%20icing:%20stir%20the%20coconut%20powder%20into%20warm%20milk%20until%20smooth.%3C/p%3E%3Cp%3EIn%20a%20medium%20sized%20bowl,%20
