Receta Masala Kadalai / Crispy Fried Peanuts

Mix the following ingredients on a wide plate; Gram flour, salt, roasted peanuts and red chilli powder.

Take a few drops of water and add it to the above mixture and rub (mix) them well together, sprinkle some more water and (see that you don't add excess water, the masala should be dry not sticky or watery) rub (mix) well using fingers so that the masala adheres well with the peanuts.

Heat a frying pan and pour oil into it, after it heats up well, spread these peanuts along with some curry leaves and fry until they turn brownish and crisp.

Remove from pan and spread it on a tissue paper to remove excess oil.

Serve after 10 minutes!! Do not serve immediately, it will get its crunchy nature only after 10 minutes.

TIP 1: Do not add more than a spoon of water. The masala will get stuck/adhere well to the peanuts as you start to rub them or mix them with your fingers.

TIP 2: Use peanuts along with their skin do not use skinless peanuts, the masala wont get adhered properly, You can find in my clicks, the skinless peanuts bland without any masala on them.

TIP 3: Just a coating will do, never make a batter for this snack. I have added lesser gram flour if you want lots of coating add another spoon of it. Rice flour is not necessary, because it is already crispy.

TIP 4: Do not serve immediately after frying serve only after few minutes. After it cools down or reaches room temperature store them in airtight containers for future use. Consume within a week.

A perfect, easy and simple snack for tea-time is now ready!! Enjoy with a hot cup of tea / coffee!!
