In Santo Domingo they use plantains to make different types of delicious dishes. One of these dishes is a very famous and popular called Mangú (which means mashed plantain)

Ingredientes
1 large plantain (cut in medium size wheels)
3 cups water
1 tablespoon butter
2 tablespoons oil
1 small piece of cooking ham, chopped
½ small purple or red onion diced
Salt to taste
Direcciones
Peel bananas and cut them into medium wheels (so the bananas will cook faster.)
In a medium bowl or saucepan, boil water, bananas and salt. Boil for a period of 18-20 minutes.
Remove the pieces of banana and place on a plate, reserving the water in which you boiled the plantains.
Mash plantains with butter, pouring spoonfuls of the water you reserved (as necessary.) Mash up the plantains to a puree and smooth consistency.
