Mashed Green Plantains or Mangu

In Santo Domingo they use plantains to make different types of delicious dishes. One of these dishes is a very famous and popular called Mangú (which means mashed plantain)

Ingredientes

  • 1 large plantain (cut in medium size wheels)
  • 3 cups water
  • 1 tablespoon butter
  • 2 tablespoons oil
  • 1 small piece of cooking ham, chopped
  • ½ small purple or red onion diced
  • Salt to taste

Direcciones

  1. Peel bananas and cut them into medium wheels (so the bananas will cook faster.)
  2. In a medium bowl or saucepan, boil water, bananas and salt. Boil for a period of 18-20 minutes.
  3. Remove the pieces of banana and place on a plate, reserving the water in which you boiled the plantains.
  4. Mash plantains with butter, pouring spoonfuls of the water you reserved (as necessary.) Mash up the plantains to a puree and smooth consistency.
  5. In a skillet, place oil and bring to medium heat, sauté the ham until slightly brown.
  6. Meanwhile chop the onion into small pieces, and add to the ham. Sauté onion and ham together for one or two minutes, and serve over mangú.
