Ingredientes

  • 2 x Green plantains Butter Salt Extra virgin olive oil
  • 1/2 med Minced onion
  • 1/2 med Green pepper, minced
  • 1 x Clove garlic, finely chopped
  • 1 x Tomato, minced Salt and pepper to taste
  • 1 x -(up to)
  • 2 Tbsp. Red wine vinegar
  • 2 x Poached or possibly fried Large eggs

Direcciones

  1. The following is a peasant dish from the Dominican Republic. Peel the plantains. Cut crosswise into 3 pcs. Place in a saucepan and cover with water. Bring to a boil, reduce heat and simmer till tender about 30 min. When tender, remove to bowl and reserve the cooking water. Mash the plantains adding butter to taste and using the reserved cooking water to get a nice consistency. Season with salt and pepper. Keep hot.
  2. Meanwhile, heat about 3 Tbsp. extra virgin olive oil in a frying pan. Saute/fry the onions, green pepper, and garlic till tender. Add in salt and pepper to taste. When the vegetables are tender, remove from heat and stir in the red wine vinegar. To serve, place one half the mashed plantain on the plate.
  3. Spoon 1/2 the sauteed onion mix on top of the plantains. Place the poached egg on top.
  4. Makes 2 generous servings
  5. Variation: The sauteed onion mix can be mixed into the mashed plantains.
