%20%20;-)%3C/p%3E%3Cp%3EAt%20the%20park%20or%20beach%20or%20even%20you%20own%20backyard...and%20the%20best%20part%20about%20going%20on%20a%20picnic%20are%20Picnic%20Baskets,%20filled%20with%20yummy%20goodies.%3C/p%3E%3Cp%3ETheres%20something%20about%20eating%20out%20in%20the%20open%20that%20makes%20even%20the%20most%20boring%20dish%20look%20spectacular%20and%20taste%20twice%20as%20good.%20%20Do%20you%20agree?%3C/p%3E%3Cp%3EThis%20Veggie%20sandwhich%20is%20a%20really%20quick%20and%20easy-to-prepare%20dish%20and%20perfect%20hand%20food%20for%20any%20picnic%20or%20outing%20or%20even%20just%20a%20tea%20time%20snack.%20All%20the%20ingredients%20used%20are%20generally%20what%20we%20always%20keep%20at%20hand%20in%20our%20homes,%20so%20its%20an%20easy%20go-to%20recipe%20and%20plus,%20its%20so%20healthy.%3C/p%3E%3Cp%3EThe%20mashed%20potato%20helps%20to%20hold%20the%20other%20veggies%20in%20the%20sandwich%20together.%20The%20chutney%20is%20the%20star%20ingredient,%20it%20brings%20out%20the%20flavor%20in%20the%20sandwiches,%20and%20saute'd%20veggies%20add%20a%20lovely%20crunch....mmm,%20my%20mouth%20is%20watering!%20;-)%3C/p%3E%3Cp%3EI%20dint%20use%20any%20butter,%20mayonnaise%20or%20ketchup%20on%20the%20bread.%20But%20you%20could%20if%20you%20want%20to.%3C/p%3E%3Cp%3EYou%20could%20even%20try%20a%20grilled%20version%20of%20these%20sandwiches%20and%20they%20might%20turn%20out%20even%20more%20tasty.%20I%20should%20try%20that%20sometime%20too%20:-)%3C/p%3E%3Cp%3EAlmost%20looks%20like%20Guacamole%20right?Here%20I%20have%20mixed%20the%20green%20chutney%20with%20the%20mashed%20potatoes,%20else%20your%20bread%20may%20become%20very%20soggy%20if%20the%20chutney%20is%20directly%20applied%20on%20the%20bread.%20This%20proved%20super%20helpful,%20specially%20when%20you%20are%20not%20eating%20the%20sandwich%20right%20away.%3C/p%3E%3Cp%3EMashed%20Potato%20and%20Veggie%20sandwiches%20with%20Cilantro-Mint%20chutney%3C/p%3E%3Cp%3EYou'll%20need%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Boil%20the%20potatoes%20until%20really%20soft%20,%20peel%20out%20the%20skin%20and%20using%20a%20potato%20masher,%20mash%20the%20potatoes%20until%20smooth%20adding%20required%20amount%20of%20Salt%20and%20pepper.%20Season%20well%20.%20(If%20you%20add%20a%20little%20butter%20,%20it%20would%20enhance%20the%20taste)%3C/p%3E%3Cp%3E2.%20For%20the%20Cilantro-Mint%20Chutney,%20grind%20all%20the%20ingredients%20in%20a%20food%20processor%20adding%20water%20as%20required%20until%20a%20thick%20and%20smooth%20chutney%20is%20obtained.%20The%20chutney%20should%20taste%20mildly%20spicy%20and%20tangy.%20You%20can%20avoid%20the%20tamarind%20pulp/lemon%20juice%20if%20you%20do%20not%20like%20the%20tangy%20taste.%3C/p%3E%3Cp%3E3.%20Using%20a%20(non-stick)%20frying%20pan,%20melt%20the%20butter%20and%20saute%20the%20veggies%20with%20the%20masala%20powders%20(optional)%20until%20onions%20are%20mildly%20pink.%20The%20veggies%20shouldn't%20be%20overcooked,%20they%20should%20still%20retain%20a%20mild%20crunch.%3C/p%3E%3Cp%3E4.%20Before%20assembling%20the%20sandwiches,%20mix%20the%20mashed%20potatoes%20with%20enough%20green%20chutney%20to%20form%20a%20smooth%20paste.%20If%20you%20have%20more%20chutney%20you%20may%20add%20it%20later%20into%20the%20sandwiches,%20but%20make%20sure%20the%20mashed%20potatoes%20don't%20get%20too%20liquidy.%20(I%20added%20about%204-5%20tblsp%20of%20green%20chutney)%3C/p%3E%3Cp%3ETo%20make%20the%20sandwich%3C/p%3E%3Cp%3E1.%20Trim%20the%20edges%20of%20the%20bread%20(optional)%20and%20keep%20aside.%3C/p%3E%3Cp%3E2.%20Take%202%20bread%20slices%20and%20add%20the%20potato-chutney%20mixture%20on%20both%20slices%20generously.%3C/p%3E%3Cp%3E3.%20Add%20the%20saute'd%20veggies%20on%20one%20of%20the%20slices%20and%20close%20the%20sandwich%20with%20the%20other%20slice%20having%20mashed%20potato-chutney%20mixture.%3C/p%3E%3Cp%3E4.%20Repeat%20until%20required%20number%20of%20sandwiches%20are%20obtained,%20or%20until%20the%20veggies%20and%20mashed%20potato%20are%20%20over%20:-)%3C/p%3E%3Cp%3ESuggestions:%3C/p%3E%3Cp%3E1.%20Veggie%20options%20are%20unlimited,%20you%20can%20try%20using%20zucchini,%20mushrooms%20,%20eggplant%20etc%20.%20For%20picky%20eaters,%20cook%20the%20veggies,%20grind%20them%20and%20add%20it%20to%20your%20mashed%20potato.%20They'll%20never%20know%20the%20difference%20;-)%3C/p%3E%3Cp%3E2.%20Even%20including%20paneer%20or%20tofu%20,%20scrambled%20eggs,%20cooked%20chicken%20etc%20is%20a%20good%20idea.%3C/p%3E%3Cp%3E3.%20Spice%20level%20can%20be%20increased%20or%20decreased%20as%20per%20taste%20preference.%3C/p%3E%3Cp%3EI%20covered%20each%20sandwich%20in%20cling%20wrap%20before%20going%20to%20the%20park.%20They%20can%20also%20be%20enjoyed%20as%20a%20cold%20sandwich.%20So%20give%20this%20a%20try,%20its%20an%20easy%20recipe%20,%20nothing%20an%20go%20wrong%20with%20it%20!%3C/p%3E%3Cp%3EWould%20you%20like%20one%20right%20now?%20;-)%3C/p%3E%3Cp%3E-Manju%3C/p%3E){kind=link}
