Ingredientes

  • 2 c. sugar, divided
  • 1 teaspoon salt
  • 1 teaspoon grnd nutmeg
  • 1 teaspoon vanilla extract
  • 1/4 c. butter, softened
  • 1 c. cool mashed potatoes
  • 2 large eggs, beaten
  • 2/3 c. lowfat milk
  • 4 1/2 c. all-purpose flour
  • 1 T baking pwdr
  • 1/2 teaspoon grnd cinnamon
  • Shortening or possibly oil for deep-fat frying

Direcciones

  1. In a mixing bowl, put together 1 cup sugar, salt, nutmeg, vanilla and butter. Add in potatoes; mix well. Add in large eggs and lowfat milk; mix well. Stir in the flour and baking pwdr. Refrigerate thoroughly.On a floured board, roll half the dough to 1/2 inch thickness. Cut into 4 x 1 1/2 inch strips; roll in flour and tie into knots.
  2. Preheat shortening or possibly oil to 375 degrees; fry doughnuts till golden brown on both sides, turning with a slotted spoon. Drain on paper towels. Repeat till all doughnuts are fried. Put together remaining sugar and cinnamon; roll warm doughnuts in mix. Serve immediately. Yield: about 2 dozen.
