Ingredientes

  • 1 1/2 lb red-skinned potatoes scrubbed, unpeeled
  • 1 1/2 lb russet potatoes scrubbed, unpeeled
  • 1 c. half-and-half
  • 1/2 c. finely-minced green onions
  • 1/4 c. butter - (1/2 stick) room temperature Salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. Cut all potatoes into 1 1/2-inch pcs. Set steamer rack in pot. Add in sufficient water to pot to reach depth of 1 inch; bring to boil. Place potatoes on rack. Cover pot and steam potatoes till tender, about 30 min.
  2. Remove potatoes and steamer rack from pot. Throw away water in pot. Return potatoes to pot. Add in half-and-half, green onions, and butter. Mash till almost smooth. Season to taste with salt and pepper and serve.
  3. This recipe yields 6 servings.
