%20I'd%20heard%20about%20it%20a%20few%20times%20before%20and%202)%20I%20was%20fascinated%20by%20the%20process%20of%20making%20'mawa'.%20Aparna%20told%20us%20that%20Mawa%20Cakes%20are%20a%20specialty%20cake%20that's%20a%20hallmark%20of%20Irani%20cafes%20in%20India.%20The%20'mawa'%20itself%20is%20basically%20caramelized%20milk%20solids,%20made%20by%20gradually%20reducing%20milk%20until%20it's%20a%20quarter%20of%20its%20original%20volume,%20thick%20and%20slightly%20lumpy.%20It%20lends%20a%20pretty%20unique%20milky%20taste%20to%20the%20finished%20cake,%20which%20is%20reminiscent%20of%20a%20butter%20cake.%3C/p%3E%3Cp%3EThis%20is%20the%20kind%20of%20cake%20that%20my%20family%20loves%20to%20devour;%20not%20too%20flashy,%20without%20any%20frosting,%20yet%20delicious%20-%20the%20perfect%20tea%20cake.%20The%20cashews%20strewn%20over%20the%20top%20add%20a%20nice%20contrasting%20crunch%20and%20goes%20well%20with%20the%20milky%20crumbs.%20I%20was%20slightly%20panicky%20over%20making%20the%20mawa,%20scared%20that%20I'd%20burn%20the%20batch%20and%20waste%20a%20whole%20litre%20of%20milk,%20so%20I%20stood%20guard%20for%20an%20hour%20and%20a%20half%20stirring%20the%20milk%20with%20one%20hand%20and%20highlighting%20my%20equity%20textbook%20with%20the%20other.%20That's%20how%20a%20law%20student%20bakes.%3C/p%3E%3Cp%3EThe%20cake%20itself%20has%20a%20tight%20crumb%20-%20be%20careful%20you%20don't%20overbake%20or%20it'll%20become%20dry%20very%20quickly.%20The%20mawa%20in%20the%20cake%20will%20warmly%20cocoon%20your%20entire%20house%20with%20an%20unbelievably%20heavenly%20smell.%20Seriously.%20I'd%20say%20make%20it%20just%20for%20that.%3C/p%3E%3Cp%3EI%20had%20lots%20of%20fun%20with%20making%20this%20cake,%20thank%20you%20Aparna%20for%20such%20a%20great%20and%20diverse%20challenge!%3C/p%3E%3Cp%3EMawa%20Cake%3C/p%3E%3Cp%3EMakes%201%208-inch%20cake%3C/p%3E%3Cp%3ENote:%20you%20can%20make%20the%20mawa%20one%20or%20two%20days%20ahead%20of%20time%20and%20store%20it%20in%20the%20fridge.%3C/p%3E%3Cp%3EFor%20the%20mawa:%3C/p%3E%3Cp%3ETo%20make%20the%20mawa:%3C/p%3E%3Cp%3EPour%20the%20milk%20into%20a%20heavy%20bottomed%20saucepan%20(if%20you%20have%20nonstick,%20use%20it).%20Bring%20it%20to%20a%20boil,%20stirring%20occasionally%20to%20make%20sure%20it%20doesn't%20stick%20to%20the%20sides%20or%20the%20base.%20Once%20it's%20at%20a%20boil,%20turn%20the%20heat%20down%20to%20medium,%20and%20cook%20the%20milk%20until%20it%20reduces%20to%20about%20a%20quarter%20of%20its%20original%20volume.%20This%20takes%20about%20an%20hour%20to%20an%20hour%20and%20a%20half.%20As%20it%20cooks,%20it's%20important%20that%20you%20stir%20it%20frequently%20so%20that%20none%20of%20the%20liquid%20sticks%20and%20burns.%20As%20it%20reduces,%20the%20color%20will%20also%20darken%20slightly.%3C/p%3E%3Cp%3EOnce%20the%20milk%20has%20reduced%20to%20about%201/4%20of%20its%20original%20amount,%20lower%20the%20heat%20even%20more%20and%20cook%20for%20a%20bit%20longer.%20Stir%20regularly%20now%20until%20you%20see%20that%20the%20milk%20has%20taken%20on%20a%20lumpy%20appearance%20and%20there%20is%20no%20visible%20liquid%20left%20in%20the%20pan.%20Remove%20from%20heat%20and%20let%20cool;%20store%20in%20the%20fridge%20if%20not%20using%20yet.%3C/p%3E%3Cp%3EThis%20will%20make%20about%203/4%20to%201%20cup%20of%20mawa.%3C/p%3E%3Cp%3ETo%20make%20the%20cake:%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20180C/350F.%20Grease%20and%20line%20an%208-inch%20round%20cake%20tin.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20using%20an%20electric%20mixer,%20cream%20the%20butter,%20mawa%20and%20sugar%20until%20light%20and%20fluffy.%20Add%20the%20eggs%20one%20at%20a%20time%20and%20beat%20each%20time%20until%20well%20incorporated.%20Add%20the%20vanilla%20and%20milk%20and%20mix%20well.%3C/p%3E%3Cp%3ESift%20the%20cake%20flour,%20baking%20powder,%20cardamom%20and%20salt%20into%20the%20batter%20and%20stir%20it%20in%20until%20it's%20just%20incorporated.%20Scrape%20the%20batter%20into%20the%20cake%20tin%20and%20smooth%20the%20top.%20Place%20cashews%20or%20almonds%20on%20top%20-%20don't%20press%20the%20nuts%20into%20the%20batter.%3C/p%3E%3Cp%3EBake%20for%2050-60%20minutes%20or%20until%20the%20cake%20is%20golden%20and%20a%20skewer%20comes%20out%20clean.%20If%20the%20cake%20is%20browning%20too%20quickly,%20tent%20it%20with%20some%20aluminum%20foil.%20Remove%20from%20the%20oven%20and%20allow%20to%20cool%20for%2010%20minutes%20in%20the%20tin,%20then%20turn%20it%20out%20onto%20a%20rack%20and%20let%20it%20cool%20completely.%3C/p%3E){kind=link}
