%20when%20I%20worked%20at%20a%20cooking%20school.%20%20I%20taught%20the%20kids'%20classes,%20couples'%20classes,%20and,%20of%20course,%20Cajun,%20Creole,%20and%20general%20Southern%20cookin'%20classes.%20%20When%20I%20wasn't%20teaching%20I%20was%20assisting...and%20my%20favorite%20class%20to%20assist%20with%20was%20the%20basic%20cooking%20technique%20course.%20%20I'm%20not%20a%20trained%20chef,%20but%20I%20had%20the%20opportunity%20to%20learn%20up-close-and-personal%20from%20a%20very%20real%20chef%20while%20I%20was%20his%20chef-wanna-be%20assistant.%20%20Chef%20Max%20taught%20me%20a%20lot%20about%20general%20techniques,%20which%20sounds%20dull...complete%20with%20the%20open%20mouth%20and%20drool.%20%20But,%20as%20he%20chanted%20over%20and%20over%20in%20his%20classes,%20if%20you%20know%20the%20basic%20methods%20you%20can%20make%20anything%20out%20of%20anything.%20%20Actually,%20that's%20how%20he%20ended%20the%20course.%20%20He%20gave%20his%20students%20a%20mystery%20box%20of%20assorted%20ingredients%20that%20they%20had%20to%20use,%20armed%20with%20the%20techniques%20they%20had%20learned,%20to%20produce%20a%20dish%20that%20the%20entire%20class%20would%20taste.%3C/p%3E%3Cp%3EI%20learned%20more%20working%20with%20Chef%20Max%20than%20I%20had%20learned%20in%20years.%20%20In%20addition%20to%20cooking%20skills,%20Max%20taught%20me%20that%20I%20can%20get%20stuff%20done%20under%20serious%20time%20constraints.%20%20He%20also%20taught%20me%20(without%20meaning%20to)%20that%20I%20could%20never%20be%20employed%20as%20a%20chef.%20%20It%20is%20a%20hard%20job...mentally%20and%20physically%20hard.%20%20And%20I%20could%20never%20balance%20family%20and%20the%20hours%20of%20a%20chef.%20%20Even%20though%20that's%20kind%20of%20a%20downer,%20I%20had%20a%20lot%20of%20fun%20working%20with%20Max.%20%20We%20got%20along%20great%20from%20the%20start%20and%20worked%20well%20together.%20%20I%20can%20honestly%20say%20that%20he%20never%20once%20pissed%20me%20off.%20%20How%20often%20can%20you%20say%20that%20about%20a%20co-worker?%3C/p%3E%3Cp%3EBut%20I%20moved%20and%20Max%20moved.%20%20And%20we're%20both%20terrible%20at%20keeping%20in%20touch.%3C/p%3E%3Cp%3EToday's%20recipe%20is%20one%20of%20my%20favorites%20from%20my%20friend,%20Chef%20Max.%3C/p%3E%3Cp%3EMise%20en%20place%20for%20Chicken%20Marsala:%20boneless,%20skinless%20chicken%20breasts,%20butter,%20olive%20oil,%20seasoned%20flour,%20mushrooms,%20chicken%20stock,%20dry%20Marsala,%20green%20onions%3C/p%3E%3Cp%3ESeason%20the%20flour.%20%20Chef%20Max%20uses%20salt%20and%20black%20pepper.%20%20I%20also%20add%20cayenne%20'cause%20I'm%20sassy%20like%20that.%20%20Dredge%20chicken%20in%20the%20flour,%20shake%20to%20remove%20excess.%20%20Raw%20chicken%20is%20not%20something%20I%20like%20to%20spend%20a%20lot%20of%20time%20looking%20at.%20%20Let's%20move%20on.%3C/p%3E%3Cp%3EHeat%20olive%20oil%20and%20butter%20together%20in%20a%20large%20skillet.%20%20When%20the%20oil%20is%20hot%20(and%20not%20a%20second%20before!),%20add%20the%20chicken.%20%20It%20should%20sizzle.%3C/p%3E%3Cp%3EChef%20Max%20would%20want%20you%20to%20place%20the%20chicken%20presentation%20side%20down%20(the%20rounded%20side).%20%20I%20say%20I'm%20hungry%20and%20tired%20and%20have%20worked%20all%20stinkin'%20day.%20%20Tonight,%20it%20goes%20in%20how%20it%20goes%20in.%3C/p%3E%3Cp%3ESaut%C3%A9%20until%20golden%20brown,%20then%20flip.%20%20If%20it%20sticks,%20it's%20not%20ready.%20%20Don't%20force%20it.%20%20Give%20it%20a%20few%20more%20minutes%20and%20try%20again.%3C/p%3E%3Cp%3EAdd%20the%20mushrooms%20so%20they%20can%20begin%20cooking.%3C/p%3E%3Cp%3EWhen%20the%20chicken%20is%20brown%20on%20both%20sides%20and%20the%20mushrooms%20have%20cooked,%20add%20the%20marsala.%20%20I%20like%20to%20use%20dry%20rather%20than%20sweet.%20%20I%20don't%20like%20sweet%20entrees.%3C/p%3E%3Cp%3EOh,%20and%20alcohol%20is%20flammable.%20%20So%20either%20remove%20the%20pan%20from%20the%20heat%20or%20cut%20off%20the%20flame%20when%20pouring%20it%20in.%20%20And%20never%20pour%20directly%20from%20the%20bottle%20unless%20you%20enjoy%20an%20occasional%20molotov%20cocktail.%20%20Totally%20up%20to%20you.%3C/p%3E%3Cp%3EDeglaze--scrape%20up%20all%20the%20goodies%20off%20the%20bottom%20to%20flavor%20your%20sauce.%3C/p%3E%3Cp%3EAdd%20the%20chicken%20stock%20and%20simmer.%20%20When%20is%20it%20done?%20%20Chef%20Max%20would%20say%20never%20rely%20on%20time.%20%20Rely%20on%20temperature.%20%20165%20F%20for%20chicken%20breasts.%3C/p%3E%3Cp%3ESeason%20the%20sauce%20with%20salt%20and%20pepper,%20if%20needed.%20%20Add%20the%20chopped%20green%20onions,%20if%20that's%20your%20thing.%3C/p%3E%3Cp%3EServe%20and%20eat!%3C/p%3E%3Cp%3EHere's%20Chef%20Max's%20recipe%20with%20a%20few%20changes%20I%20made,%20like%20adding%20green%20onions.%20%20In%20case%20you%20haven't%20noticed%20I%20add%20green%20onion%20to%20just%20about%20everything.%20%20I%20never%20make%20the%20entire%20recipe.%20%20There's%20only%203%20of%20us,%20so%20I%20make%201/3%20of%20it.%20%20But%20I%20don't%20reduce%20the%20mushrooms%20by%201/3...I%20use%201/2%20of%20what%20the%20original%20recipe%20states.%20%20Me,%20I%20like%20a%20lotta%20mushrooms.%3C/p%3E%3Cp%3EMax's%20Chicken%20Marsala%3C/p%3E%3Cp%3EMs.%20enPlace%20from%20my%20friend,%20Max%3C/p%3E%3Cp%3E(Serves%209)%3C/p%3E%3Cp%3EPat%20chicken%20dry.%20Set%20aside.%20Heat%20butter%20and%20oil%20in%20saut%C3%A9%20pan%20(enough%20to%20cover%20the%20bottom).%3C/p%3E%3Cp%3EGenerously%20season%20the%20flour%20with%20salt%20and%20pepper.%20%20Dredge%20chicken%20in%20flour%20and%20add%20to%20heated%20butter%20and%20oil.%20%20Season%20the%20chicken%20again%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3ESaut%C3%A9%20until%20golden%20brown,%20then%20turn%20over.%20Salt%20and%20pepper%20again.%20Add%20mushrooms%20and%20cook%20until%20chicken%20is%20golden%20brown%20on%202nd%20side.%3C/p%3E%3Cp%3ERemove%20pan%20from%20heat%20or%20cut%20off%20flame.%20Deglaze%20with%20Marsala%20wine.%20Return%20to%20heat.%20Add%20chicken%20stock%20and%20simmer.%20Cook%20until%20chicken%20is%20cooked%20completely%20through%20and%20sauce%20has%20started%20to%20thicken.%20%20Just%20before%20serving,%20stir%20in%20green%20onion.%20%20Taste%20the%20sauce%20and%20add%20additional%20seasoning%20if%20needed.%3C/p%3E){kind=link}
