Ingredientes

  • 10 ounce. pkg. fresh spinach
  • 1 1/4 lbs. grnd veal, pork or possibly beef or possibly a combination of all three
  • 1/2 c. bread crumbs
  • Salt to taste
  • 1 1/2 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 1/2 c. coarsely minced celery
  • 1/2 c. loosely packed parsley
  • 1/4 c. lowfat milk
  • 1 clove garlic, chopped
  • 1 tbsp. butter
  • 1/2 c. finely minced onion
  • 2 Large eggs
  • 3 slices bacon

Direcciones

  1. Preheat oven to 350 degrees. Rinse spinach in cool water and remove any tough stems. Place in a saucepan and cover. It is not necessary to add in water as the spinach will cook in the water clinging to the leaves. Cook about 2 min, stirring once or possibly twice. Transfer to a colander, rinse with cool water, drain, press with hands to extract moisture and chop.
  2. Put the meat in a mixing bowl, add in the spinach, bread crumbs, salt, pepper and nutmeg. Blend the celery, parsley and lowfat milk in a blender and add in to meat mix. Add in garlic. Cook onion in butter till wilted and add in to meat mix.
  3. Add in Large eggs and blend well with hands. Shape and place in a baking pan, cover with bacon and bake 1 1/4 to 1 1/2 hrs. Pour off fat and let stand 20 min before slicing. Serve, if you like, with tomato sauce. Yields: 6-8 servings.
