Receta Meat Loaf with Sweet Potatoes and Pineapple
No boring meatloaf dinner here! Sweet potatoes and pineapple slices baked with meatloaf make for an unusual twist in this meal-in-one-dish. Use all beef, or part ground pork, reduced-fat pork sausage, veal, etc. Tomato paste may seem an odd ingredient for meatloaf and too concentrated, but it works well here for flavor, sweetness and color. The baked sweet 'tatoes and pineapple are divine! Next day.... enjoy meatloaf sandwiches!

- Preheat oven to 350 degrees F. Lightly spray a large baking dish, about 10" x 14".
- In large mixing bowl combine meat, onions, garlic, eggs, parsley, bread crumbs, chili powder, cumin, salt, pepper(s), and tomato paste. Shape into a large oval mound in center of prepared dish.
