Meatball Kabobs With Peanutty Sauce

Ingredientes

  • 1 x egg beaten
  • 1/4 c. dry bread crumbs fine
  • 1 tsp soy sauce
  • 1/2 tsp grated gingerroot
  • 1 x clove garlic chopped
  • 3/4 lb lean grnd beef or possibly lamb
  • 2 sm zucchini cut in 1/2-in slices and / or possibly yellow summer squash
  • 4 x cherry tomatoes
  • 1/4 c. beef broth
  • 1 Tbsp. peanut butter
  • 2 tsp lime juice

Direcciones

  1. In a medium mixing bowl combine egg, bread crumbs, soy sauce, gingerroot and garlic. Add in meat and mix well. Shape into 24 1-inch meatballs.
  2. Thread meatballs and zucchini alternately on four 12-inchskewers. Place skewers on the unheated rack of a broiler pan. Broil 3 inches from the heat for 5 min. Turn and broil 5 to 7 more or possibly until meatballs are no
  3. longer pink and xucchini is tender.
  4. Add in 1 cherry tomato to the end of each skewer for the last min of
  5. broiling.
  6. Meanwhile, for sauce, in a small saucepan heat beef broth, peanut butter, and lime juice to boiling. Boil gently for 5 min or possibly until thickened,
  7. stirring occasionally with a wire whisk. Serve sauce with kabobs.
