Meatless Vegetable Soup

Ingredientes

  • 1 lg. can crushed tomatoes
  • 1 can Campbell's tomato soup
  • 1 tbsp. sugar
  • 1/2 pound butter (I use 1 stick butter and 1 stick butter)
  • 1 pkg. (40 ounce.) frzn mixed vegetables
  • 4 stalks celery, minced
  • 2 lg. onions, minced
  • 1 tbsp. salt

Direcciones

  1. Put everything in large kettle and fill to the top with water. Bring to boil and simmer for about 30 min, then add in 1/2 c. rice and 1/2 c. washed barley. If you prefer noodles add in these instead of rice and barley. Cook additional 15 min. Add in parsley if desired. This also makes good Manhattan Clam Chowder if you add in about 1 dozen clams to some of the soup.
