4 oz. goat cheese or good quality feta (not to be found at the grocery, but can find at a near eastern market - go for Bulgarian or Egyptian sheep feta)
1 T extra virgin oil
2 scallions, chopped
1 fat clove garlic
juice of 1 lemon
1 tsp. any fresh herb, such as oregano, or basil
salt and pepper to taste
garnish extra oil and paprika

Put everything into a blender and process until smooth.
Put into a bowl and pour some oil on top and sprinkle with paprika.
