Receta Mediterranean Flatbread

The Mediterranean diet is one of the healthiest diets in the world, and one of the most delicious ones too! The staples of the Mediterranean diet are fresh vegetables, fresh fruits, lean meat, seafood, whole grains, nuts, legumes, yogurt, red wine and California Black Ripe Olives of course. What’s not to like about that? When you follow the Mediterranean diet, you are increasing your chances for a long and healthy life; especially when you add California Black Ripe Olives to the mix. They are not only flavorful, they are good for you too! California Ripe Olives are a good source of vitamin E (.25 mg per serving), iron (.49 mg per serving), vitamin A (60 IU per serving) and fiber (.5 grams per serving). California Ripe Olives has challenged the Recipe Reduxers to use California Black Ripe Olives in a unique and tasty recipe that incorporates flavors that are part of a Mediterranean diet. Tomatoes and herbs are still fresh this time of year, so I decided to make flatbread Mediterranean style. It’s loaded with a mixture California Black Ripe Olives, tomatoes, artichokes and fresh herbs piled onto Naan bread.
The bread is then topped with feta cheese and baked for 15 minutes. . .
Cooled for a few minutes and finished off with a helping of baby arugula and red onions.
Mediterranean Flat Bread can be a quick-healthy dinner or appetizer. I used Naan bread for this recipe, but you can substitute your favorite flat bread or pizza dough.
Mediterranean Flatbread
Ingredients
- 2 - 9 inch Naan or your favorite prepared pizza dough
- 1 cup chopped fresh tomatoes
- 3/4 cup chopped California Black Ripe Olives
- 1/2 cup frozen artichoke heart quarters that have been thawed
- 2 cloves chopped garlic
- 1/3 cup chopped packed fresh basil
- 1/4 cup chopped oregano leaves
- 1 1/2 tablespoons olive oil
- 1/2 cup feta cheese
- 4 ounces of baby arugula
- 1/4 cup red onion
Instructions
preheat oven to 425
mix the tomatoes through olive oil together in a bowl
spread the mixture onto the bread
top each bread with feta cheese
place directly on grill or oven rack and bake for 10 to 15 minutes until crust becomes crispy and cheese has melted
When cool enough; slice each bread in half and top with arugula and onion
