Mee Goreng

Mee goreng means fried noodles. It is one of a Malaysian favourite that can be eaten at any time of the day (like nasi lemak). It is generally made from yellow egg noodles but since I am not able to find them here I substituted it with instant noodles! Just "dress" it up with some ingredients and you are good to go!

Ingredientes

  • 3 packets of instant noodles (you may use a little of the seasoning or not)
  • 1 small carrot - thinly sliced long
  • Some cabbage - sliced
  • 200 g chicken breast - sliced into bite sizes & marinade with some ginger & garlic paste, red chilly, turmeric and cumin powders and salt.
  • Prawns (optional) or 1 tbsp dried prawns
  • 1 egg
  • 1 onion
  • 2 cloves garlic
  • 1 green or red chilli
  • 2 tbsp home-made chilli paste
  • 2 tbsp soy sauce
  • Salt to taste

Direcciones

  1. Soak the noodles in water for 30 - 40 minutes or until the noodles are soft. (NB: don't have to pre-cook the noodles as it would be overcooked and soggy).
  2. Crush the onions, green or red chilli, garlic and dried prawns in a mortar and pestle.
  3. In a wok, heat oil and fry the chicken and set aside (if you have fish balls or fish cake you may fry this and set aside too).
  4. Heat more oil and fry the crushed items, vegetables and add the chilli paste and soy sauce and some of the seasoning. Then add back the chicken and add some water and salt.
  5. Next, add in the drained noodles and mix well with all the ingredients. Then make a well and break 1 egg and stir-fry with the noodles. Tip: Add more oil to cook the noodles well.
  6. Check if enough salt and once the noodles are cooked, serve straight away.
