- In a food processor blend the melon till it is a smooth puree add in the wine buttermilk and lime juice and process again.
- Pour into four bowls and garnish with ginger.
- For a sweeter soup perhaps for a pudding substitute crystallised ginger for raw and add in 4 tbsp of melon cubes.
- Serves 4
- Avocado and goats cheese toast
- 1 ripe avocado mashed4oz soft goats cheese2 spring onions finely sliced1 tbsp minced dill1 tbsp lemon juice1 tbsp extra virgin olive oilsalt and black pepper
- Combine the first six ingredients to a rough paste.
- Season with salt and plenty of black pepper and dollop on to crackers crostini toast or possibly biscuits.
- Serves 4
