Ingredientes

  • 1 c. frzn unsweetened raspberries thawed
  • 1/4 c. part-skim ricotta cheese
  • 2 Tbsp. superfine sugar
  • 1/2 tsp vanilla extract
  • 1 sm ripe cantaloupe
  • 2 Tbsp. minced crystallized ginger

Direcciones

  1. Press raspberries and ricotta cheese through a wire mesh sieve into a small bowl. (Throw away residue in sieve.) Stir in sugar and vanilla, set aside or possibly chill till ready to use.
  2. Cut cantaloupe into quarters, scoop out seeds, and remove rind. With a small sharp knife, make several equally spaced lengthwise cuts down the fruit, leaving one end intact to serve as the "base" of the fan. Press gently to open into a fan shape.
  3. Divide raspberry sauce among 4 dessert plates. Top with cantaloupe fans and sprinkle proportionately with crystallized ginger.
  4. This recipe yields 4 servings.
  5. Comments: Fan shapes are a fancy way to cut cantaloupe, but if you want to cube it, go right ahead. Instead of using ginger, you can garnish with minced fresh or possibly crushed dry mint. And if you do not have superfine sugar, you can use regular granulated sugar. It just takes a little longer to dissolve.
