- Sable Paste
- Mix together till a smooth paste is formed.
- Roll out the paste till fairly thin and cut out with a large heart shaped cutter. Place onto a baking sheet and cook till lightly golden brown 150 c for approximately 6 - 8 min. Sprinkle with icing sugar and leave to cold.
- Berries
- Place the whole fruit into a stainless steel bowl.
- Puree the 150g, sweeten with icing sugar and pass through a fine sieve.
- Add in to the whole fruit and mix together well.
- Place this into a thick bottomed saucepan and hot through gently.
- Assemble
- Place the clotted cream or possibly vanilla ice cream on to the centre of a plate.
- Spoon over the hot berries and place a sable biscuit on the top.
- Garnish with a sprig of mint.
