Menestra is a classic Spanish vegetable soup dish prepared with different Mediterranean vegetables like artichokes, Manzanilla olives and white beans as a base then spiced up with some paprika and sherry vinegar. From here you can add other vegetables of your choice but traditionally asparagus, mushrooms, capsicum, beans and peas are used. It can be served with rice or a crusty bread and trust me it’s one of the best vegetable dishes I ever tried. Usually this dish is vegetarian but on my version I added more Spanish flavour to it by using some chorizo which made it even more amazing, it’s a dish that reminds me of pinakbet but with a Mediterranean flavours. Have you tried this dish?Menestra  Save PrintPrep time Cook time Total time  Serves: 4-5Ingredients4 pcs medium Spanish chorizo12 pcs mushroom, cut in half1 large potato, diced1 bunch asparagus, sliced1 red capsicum, sliced400 g can cannellini beans1 cup green peas6 pcs marinated artichokes, cut in half, reserve the liquid12 pcs olives2 cups boiling water1 tbsp paprika2 bay leaves½ tsp cayenne1⁄2 cup dry sherry2 onions, thinly sliced4 cloves garlic, minced¼ cup olive oilsea saltfreshly ground black pepperparsley, to garnishInstructionsIn a large pot heat up olive oil then sauté garlic and onions.Add the chorizo, potatoes, mushrooms, paprika, cayenne and bay leaves, continue to sauté for a minute.Pour boiling water, the reserved liquid from marinated artichokes and dry sherry bring it to a boil then simmer for 5 minutes.Add the capsicum and asparagus then simmer for 2 minutes.Add the artichokes, peas and cannellini beans then simmer for 5 minutes.Add the olives, give it a good mix then season with salt and freshly ground black pepper.
