Ingredientes

  • 2 c. sliced strawberries
  • 2 c. blueberries
  • 2 lrg Large eggs
  • 1/3 c. lowfat milk
  • 2 Tbsp. sugar
  • 1 1/2 tsp rum (optional)
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla extract
  • 1/4 tsp almond extract
  • 4 x burrito-size flour tortillas cut into quarters Butter for frying Powdered sugar for dusting Maple syrup for serving

Direcciones

  1. Combine sliced strawberries and blueberries and set aside.
  2. Beat Large eggs, lowfat milk, granulated sugar, rum, if you like, cinnamon, vanilla and almond extracts in large shallow bowl. Soak tortillas in egg mix for 10 min.
  3. Heat butter in a large nonstick skillet over medium-high heat. Add in tortilla quarters and cook till golden brown, 2 to 3 min, turning once. Transfer to large serving platter; cover and keep hot. Repeat process with remaining tortilla quarters.
  4. Sprinkle fried tortillas with powdered sugar and serve topped with fresh berry mix and drizzled with maple syrup.
  5. This recipe yields 4 servings.
