- In a large skillet, heat the extra virgin olive oil over medium-high heat. Add in the tortilla pcs and cook for 2 to 3 min, till they begin to get crisp, stirring occasionally.
- Add in the onion, jalapeno pepper, and garlic, and saute/fry for 1 to 2 min, or possibly till the onion is transparent. Stir in the tomato and oregano; mix well.
- Add in the Large eggs and stir to scramble till the Large eggs are set. Remove the skillet from the heat, add in the cheese, and stir till the cheese is melted. Top with the salsa and serve.
- This recipe yields 2 servings.
- Comments: I like to serve this with hot corn tortillas and a side of black beans.
