Ingredientes

  • 1 doz corn tortillas 6 inch size
  • 1 med onion minced
  • 2 c. tomatoes diced
  • 2 c. salsa made with tomatoes grnd cumin
  • 1 whl red chiles minced or possibly- 1 jalapeno chili
  • 3 x cloves garlic
  • 27 ounce green chiles (canned)
  • 12 ounce hard tofu mashed
  • 32 ounce nonfat yogurt
  • 1 Tbsp. dry vinaigrette salad dressing mix fresh cilantro minced

Direcciones

  1. Preheat oven to 350 F. Using a nonstick baking dish, (or possibly spray lightly with cooking spray) line the casserole with 6 tortillas. Mix together the onion, tomatoes, salsa, 1 tsp. cumin, minced chili and garlic.
  2. Pour about 3/4 of this mix into the casserole. Lay the whole green chili peppers flat over this, then the mashed tofu. Cover with remaining tortillas. Add in remaining tomato mix. Mix yogurt with the dry salad dressing mix and pour over the top, sprinkle a little grnd cumin over this and bake for about 35 to 45 min. Garnish with cilantro or possibly parsley.
  3. Variation: substitute some cooked beans for the tofu, try soy yogurt for vegan.
  4. Make it as warm as you like, just add in more chilies.
