- Char broil the wings to impart grill flavor and "mark", but don't cook completely through.
- In a heavy-bottomed saucepan, heat oil to smoking point, then add in onions and toss till golden. Add in garlic and cook for 1 more minute, then add in cocoa. Stir till cocoa is proportionately distributed and no longer has a dry appearance. Add in chicken stock and stir till smooth.
- Add Mexican herb blend and Tabasco brand Garlic Pepper Sauce. Remove from heat and stir till cooled. This sauce will be the Mole (Mexican Chocolate) sauce.
- Heavily dredge wings with the Mole sauce. Place in oven and cook till done - till an internal temperature of 165 degrees is reached.
- Serve topped with small-diced red bell peppers.
- This recipe yields 1 dozen wings.
