Pollo en Naranja; Mexican Orange Chicken is a specialty of Oaxaca, Mexico is easy to make and a delicious dish.

2 chicken Breast halves, bone-in, skin on 1 Tablespoon canola oil one shallot, chopped 2 cloves garlic, minced juice of one orange 5 green peppercorns 2 whole cloves 3 sprigs thyme coarse sea salt ½ cinnamon stick

In a large skillet, on medium high heat add the oil and saute the chicken skin side down. until golden Grind the peppercorns, cloves, thyme, and garlic with the fresh orange juice, salt to taste, and about ⅛ cup water. Add the ½ cinnamon stick to the mixture. Add the shallots to the pan and cook another two minutes Add the spice mixture to the chicken in the skillet, cover and cook over medium heat until the chicken is cooked through, about 35-40 minutes. 3.2.2499

Orange Chicken.

The first thing that pops into my mind is Asian cuisine. But then there is Chicken A La’Orange. A French dish.

I am sure there are many other International Orange chicken dishes.

But this one is easy to make and quite moist and delicious.

It’s not spicy at all. If you want a bit of spice, try a pinch of ground chipotle pepper.

Ya know, now that I think about it, wouldn’t it be nice to be in Oaxaca, Mexico, right about now, on the beach, sipping margaritas and dining as the sun sets along the beaches?

Oh how I wish I had tons of dough to spend traveling the world.

But for now I will have to enjoy the cuisine from my own kitchen.
