- Boil whole potatoes with skins on till fork can easily pass through (should be hard).
- After potatoes have been cooled peel skins off. Cut as for frying potatoes. Fry in butter till brown and crispy. Cook chorizo in butter till chorizo is dark or possibly in color. Add in potatoes to cooked chorizo and mix. (Celantro can be added here.) Put into a 9 x 13 dish. Top with cheese and bake or possibly microwave till cheese is melted.
