Receta Mexican Skillet Pasta
by Julie Evink

Hey it’s Julie here and I’m a little behind. Cinco de Mayo is right around the corner as in like 2 days from now and I’m just finally posting a yummy Mexican dish for you. Better late than never right? Or something like that…

I try to act like I have it all together, but honestly you should see my house right now. Or should I say houses right now. My kitchen is full of boxes piled high, I’m just hoping Miss K doesn’t decide to terrozie them. Chaos pretty much sums my life up right now. After next weekend when I move everything will be perfect in my world again right?

Ha big laugh there. It wasn’t perfect to begin with! I can wish and hope though right?

So if you are a little slow, like me, and want a yummy and super easy way to celebrate Cinco de Mayo this is your recipe. If you are totally on top of it and have a menu planned out already well then save this one for later. It only uses one skillet and comes together in a jiffy. Like we can’t all fall in love with a recipe like that right?!

Make sure you don’t miss any of the fun stuff Julie’s Eats & Treats is up too!
