Mexican Wedding Cookies

Ingredientes

  • 1/2 c. (1 stick) butter, softened
  • 1 c. sifted flour
  • 1 c. pecans
  • 1/4 c. plus 2 tbsp. confectioners' sugar
  • 1/2 teaspoon orange extract

Direcciones

  1. Combine butter and 1/4 c. confectioners' sugar in mixing bowl with mixer till light and fluffy. Stir in flour. Stir in pecans till well blended.
  2. Using about 1 level measuring tablespoonful for each cookie, shape dough into balls and place 2 inches apart onto greased baking sheets.
  3. Bake in preheated moderate oven (350 degrees) for 15 min or possibly till hard.
  4. Transfer cookies to a wire rack placed over sheet of waxed paper to cold completely. Dust with remaining 2 Tbsp. confectioners' sugar. Store cookies in tightly sealed container at room temperature. These cookies can be placed in a freezer.
