Mexican Wedding Cookies
My Grandma made these cookies every year during the Holidays. She called them Pecan Fingers. These cookies have always been a favorite of mine. Not only are they easy to make, and I always have the ingredients on hand, they taste great!!
- Mexican Wedding Cookies or Pecan Fingers
- 1 cup (2 sticks) butter at room temperature
- 1/2 cup confectioners' sugar, plus more for coating baked cookies
- 1 teaspoon almond extract
- 1-3/4 cup flour
- 1 cup pecans, chopped very fine
- 1. Preheat oven to 275º. Line baking sheets with parchment paper
2. Using an electric mixer at low speed, cream butter and confectioners' sugar until smooth. Beat in the almond extract. At low speed, gradually add the flour. Mix in the pecans.
3. With floured hands, take out about 1 tablespoon of dough and shape into a crescent. Continue to dust hands with flour as you make and shape cookies. Place them 1 inch apart on prepared baking sheets, Bake for 45 mins. Remove from oven and roll in additional confectioners' while still warm. Cool completely on wire racks. Store in air tight containers.
