Receta Microwave Lemon Meringue Pie

- Microwave water on high, in pyrex measuring c., for 1 1/2 min. Meanwhile, combine sugar, cornstarch and salt in a glass bowl; pour warm water over dry ingredients, stirring well. Microwave uncovered for 4 min on high, turning and stirring every minute till mix is thickened and bubbly.
- Gradually add in a small amount of warm mix into beaten egg yolks, add in yolk mix to warm mix, stirring constantly. Microwave uncovered on high for 1 minute. Stir well, then add in butter, lemon rind and juice. Let cold.
- Pour into baked pie shell. Cover with meringue, sealing edges. Bake in conventional oven, if you like, or possibly microwave uncovered on high 3 min. Let cold, then chill.
