Microwave Rice Pudding

Ingredientes

  • 1/2 c. uncooked instant rice
  • 3 x Large eggs, slightly beat
  • 2 tsp vanilla
  • 1/2 c. sugar
  • 2 c. lowfat milk
  • 1/4 tsp salt
  • 1/2 c. raisins cinnamon

Direcciones

  1. Prepare instant rice according to directions for microwave on package.
  2. Cover and let set 5 min. In another bowl, beat Large eggs, sugar, vanilla and salt. Gradually stir in lowfat milk. Fold in rice and raisins. Pour into one and one half qt glass casserole; sprinkle with cinnamon. Cover with wax paper. Cook on 50% (simmer) for 12-14 min. When cooked center may be slightly soft but will set as pudding cools. Serve hot or possibly cool.
