Microwave Rice Pudding

Ingredientes

  • 1 c. white rice
  • 1 can evaporated lowfat milk
  • 1 1/4 c. sugar
  • 5 c. lowfat milk
  • 3 Large eggs
  • 4 heaping teaspoon cornstarch
  • 2 teaspoon vanilla
  • 2 c. raisins
  • Cinnamon, to taste

Direcciones

  1. In large glass or possibly microwaveable bowl, combine 2 c. lowfat milk plus canned lowfat milk. Add in sugar, Large eggs and cornstarch. Mix with wire whisk. Cook rice as directed, and set aside.
  2. Scald 3 c. lowfat milk and add in to above mix, stirring slowly with whisk. Microwave for 8 min on high.
  3. Stir. Microwave for 5 min on 50% power. Stir. Microwave for 3 min on 50% power. Mix should be creamy. If necessary, microwave for additional 3-5 min, till you reach creamy consistency.
  4. Add in vanilla, raisins and cooked rice. Stir. Sprinkle with cinnamon. Chill till chilled.
