Microwave Stuffed Mushrooms

Ingredientes

  • 8 ounce. fresh mushrooms
  • 1 tbsp. butter
  • 2 tbsp. minced green onion
  • 2 tbsp. dry bread crumbs
  • 2 tbsp. lowfat sour cream
  • Dash salt and pepper

Direcciones

  1. Remove stems from mushrooms and set caps aside. Finely chop stems. In small bowl, combine minced stems, butter and green onion and microwave on high for 1 to 1 1/2 min till stems are tender.
  2. Stir in remaining ingredients except caps. Spoon filling into caps. Place on a plate and microwave on high for 2-3 min till warm (turn plate once).
  3. WALNUT-STUFFED MUSHROOMS: Same recipe only add in 1/3 c. minced walnuts and dash of thyme.
  4. CHEESE-STUFFED MUSHROOMS: Same recipe except substitute 2 tbsp. shredded Cheddar cheese for the lowfat sour cream.
  5. Serves 6-8. Total cooking time, 4 1/2 min.
