Microwave Tapioca Fluff Pudding

Ingredientes

  • 1 egg, separated
  • 3 tbsp. sugar
  • 1/8 teaspoon salt
  • 2 teaspoon lowfat milk
  • 3 tbsp. tapioca
  • 2 tbsp. sugar
  • 3/4 teaspoon vanilla

Direcciones

  1. Combine egg yolk, 3 Tbsp. sugar, salt, lowfat milk and tapioca in 1 1/2 or possibly 2 qt bowl. Stand 3 min. Beat egg white foamy and beat in sugar to soft peaks.
  2. Place tapioca mix in oven and microwave 8 to 10 min on "8" or possibly till mix thickens. Stir twice. Fold tapioca mix into meringue carefully. Stir in vanilla.
