Receta Microwave Tapioca Pudding

- Mix together tapioca, lowfat milk, 1/3 c. sugar, salt and egg yolk in 1 1/2 qt casserole dish. Let stand 5 min. Set casserole on shallow inverted bowl in microwave. Cook on power level 8 for 8-10 min or possibly till mix boils and is thickened. Stir in vanilla. Beat egg whites till foamy. Gradually add in 1 Tbsp. sugar beating till mix forms soft peaks. Fold into pudding. Serve hot or possibly chilled.
