Microwave Yellow Squash With Tomatoes

Ingredientes

  • 1 c. liquid removed canned crushed tomatoes (reserve liquid)
  • 1 teaspoon minced fresh parsley
  • 2 teaspoon minced liquid removed capers
  • 1 teaspoon dry oregano
  • 1/2 teaspoon dry basil
  • 1/8 teaspoon salt
  • 3 c. sliced yellow squash, cut in 1/4-inch pcs
  • 2 teaspoon grated Parmesan cheese

Direcciones

  1. In 1-qt casserole, combine tomatoes with 1/4 c. liquid, then parsley, capers, oregano, basil and salt. Add in squash and stir to combine. With vented cover, microwave on HIGH 5 min, stirring once. Let stand covered for 2 min before serving. Sprinkle with cheese before serving.
