3 1/2 c. Cooked, Liquid removed Black Beans (1 c. dry)
1/2 c. Red Onion -- finely diced
1 lrg Tomato -- seeded and diced
1 sm Green Pepper -- seeded and Diced
1 med Cucumber -- seeded and Diced
1/2 c. Minced Parsley
1 Tbsp. Minced Fresh Mint
1/4 c. Lemon Juice
1 tsp Cumin
1/4 tsp Salt -- (or possibly to taste)
1/4 tsp Pepper
1/4 c. Extra virgin olive oil

Combine salad ingredients together and toss lightly. For dressing, add in spices to the lemon juice and beat in oil. Pour over salad and refrigeratefor several hrs.
