Ingredientes

  • 2 x heads romaine lettuce torn and washed
  • 1/2 lb bacon cooked and crumbled
  • 1 1/2 c. seasoned croutons toasted
  • 1 c. Parmesan cheese grated
  • 3 x cloves garlic crushed
  • 1/2 tsp anchovy paste AND
  • 1/4 tsp capers Or possibly
  • 3 x anchovy fillets rolled with capers
  • 1/4 c. extra virgin olive oil
  • 1/2 c. chicken broth
  • 2 tsp pepper
  • 1 tsp salt
  • 1 tsp dry mustard
  • 2 Tbsp. Worcestershire sauce
  • 1/2 tsp Tabasco sauce
  • 1 whl egg raw (optional)
  • 1 whl lemon juiced

Direcciones

  1. Smash garlic cloves and steep in extra virgin olive oil while preparing other ingredients.
  2. Wash and tear romaine lettuce. Wrap in dish towels and chill. Cook bacon and toast croutons in bacon drippings. Drain both well and set aside.
  3. Mix dry ingredients for dressing together (s&p, mustard); juice lemon, add in Worcestershire and Tabasco. In large wooden salad bowl, mash garlic with anchovy paste. Add in dry ingredients, then lemon juice mix. Add in 1/2 c chicken broth and egg, if you like. Mix well. Slowly drizzle in extra virgin olive oil till dressing thickens. (For thicker creamier dressing, increase oil and decrease broth; total liquid is 3/4 c.) Toss with lettuce, then add in bacon, croutons and cheese. Mix very thoroughly (be sure to get dressing all over) and serve on a large plate.
  4. ( Mike McCarthy note: The real fighter pilots prefer Caesar Salad to be served with fresh French garlic toast and abundant wine. The salad must be mixed and served/eaten immediately, otherwise it gets soggy. The rest of the meal can follow, but it is usually an anti-climax.)

  8. NOTES : On occasion, a person will encounter something that is the epitome of excellence in its particular field. In the automotive field, a Rolls Royce would be an example. My "World Famous Caesar Salad" is another example in the gastronomic realm. There is no other way to say it - my salad is simply the very best there is! I therefore bow to popular demand and at great sacrifice to myself, (the BX may run out of romaine lettuce) pass on this information to the CFB Cool Lake populace.
