Ingredientes

  • 3 c. Millet, uncooked
  • 1 Tbsp. Corn oil
  • 2 med Onions, thinly sliced
  • 3 x Celery stalks, thinly sliced
  • 1 c. Chickpeas, cooked
  • 5 c. ,water
  • 1 tsp Salt
  • 2 c. Broccoli, minced Watercress or possibly parsley,chopped for garnish

Direcciones

  1. Rinse and drain millet.
  2. Dry roast millet i a heavy skillet for 6 min, stirring constantly, till the millet gives off a nut-like fragrance. Remove from heat.
  3. Heat oil in a large saucepan over medium heat and saute/fry onions for 2 min.
  4. Ad celery and saute/fry for 5 miknutes stirring often.
  5. Add in chickpeas, water and salt. Bring to a boil.
  6. Stir in millet and return to a boil. Reduce heat, cover and simmer for 20 min.
  7. Add in broccoli and continue to cook for 5 min.
  8. While mix is warm, press firmly into a 9" cake pan.
  9. Sprinkle with garnish, cut into squares and serve.
