Ingredientes

  • 3 LB bacon
  • 4 Qt each diced onion, celery, carrots
  • 2 qt each shredded cabbage and diced potato
  • 2 cans diced tomatoes
  • 1/4 cup minced garlic
  • 2 T each oregano and basil
  • 1 can white beans
  • 9 gallons water
  • ham & lo sod beef base to make a rich broth
  • 1/4 cup black pepper
  • 2 Qt green beans
  • 1 # cooked elbow pasta

Direcciones

  1. Saute bacon to render fat, then add onions and celery to cool til soft and bacon browned (Please use some left over bacon whenever possible)
  2. Add cabbage, spices, base, garlic, and saute a few minutes
  3. Add potatoes, carrots, water, beans, and bring to a boil
  4. Reduce heat- about 1/2 hour prior to service add green beans
  5. Have pasta added as the soup is being take to the cafe for service (Steam person or a cook can do this)
  6. Serve with parmesan cheese on the side
