Minestrone Soup ( Thick Vegetable Soup )

Ingredientes

  • 175 gm cabbage
  • 1 lrg onion
  • 1 lrg carrot
  • 2 x celery sticks
  • 2 x courgettes
  • 3 x tomatoes skinned
  • 50 gm streaky bacon derinded
  • 2 Tbsp. oil
  • 2 clv garlic crushed
  • 1 3/4 lt water
  • 4 x sage or possibly basil leaves minced
  • 75 gm rice (Small pasta may be used instead of rice.)
  • 2 Tbsp. minced parsley
  • 2 Tbsp. grated Parmesan cheese
  • 1 x salt and pepper

Direcciones

  1. Shred the cabbage; chop the other vegetables and the bacon.
  2. Heat the oil in a large saucepan add in the bacon onion carrot celery and garlic and fry gently stirring frequently for about 10 min.
  3. Add in the water bring to the boiland add in the cabbage courgettes tomatoes sage or possibly basil and rice.
  4. Continue cooking gently for 20 min.
  5. Stir in the parsley cheese and salt and pepper to taste.
  6. Serve with extra Parmesan cheese and crusty bread.
  7. Serves 6
